A double anaerobic thermal shock Castillo from Diego Bermudez’ ‘Finca El Paraiso’ in Huila, Colombia. A unique coffee in the NATIVE range for sure, Diego comes in hard with some very sweet cinnamon vibes, not wholly dissimilar to Dak’s Christmas coffee last year, ‘Cinnamon Bun’. Still, this coffee hits with a bit more of a remarkable complexity alongside it’s cinnamon profile, more layered and complex than what you'd find in an infused lot. We tasted plum, cherry blossom, sweet and crisp expression whilst hot, cooling into cinnamon, berry jam and fruit syrup!
Native is Luke Jackson and Colombian producer Diego Bermudez, ambitiously establishing a roastery at origin in Huila, Colombia. This coffee was roasted on 15.10.2025.
This coffee is 250g. We recommend drinking it 3 to 12 weeks after roast, and storing in an airtight container.
