Vergara’s coffees always capture the imagination, through expressive and dare-I-say convoluted processing, but you be the judge: 36 hours of whole cherry sealed fermentation, 12 hours unsealed, depulped cherries then have an extra 36 hours sealed fermentation cleared of coffee juice followed by 30 minutes of thermal shock washing at 50c, before finally being mechanically dried for 36 minutes. It’s hard to taste past ‘Froot Loops’ but we’re tastin’ artificial vibes, candylike complexities, light peachiness and very clean off the palate!\u003c\/p\u003e\n\u003cp\u003e\u2028\u2028Dak was founded by Louis-Philippe Boucher and Veronique Lagarde, and they roast in Amsterdam, the Netherlands.
