Our first Koji lot! From the esteemed Shady & Elias Bayter in El Vergel in Tolima, Colombia, this family has been pushing the boundaries of coffee production for years. They run a certified ‘Rainforest’ farm and have been growing and experimenting with different varieties and processing methods for years. Their Koji lot gained notoriety in 2021 at Barista championships around the world, bringing a deliciously sweet and uniquely complex cup thanks to fermentation aided by Koji spores. We tasted an intense and winey, funky boozy vibe bolstered by some cherry and crazy tropical fruits as well!
