This is a lil region somewhere between Huila’s Gigante and Tarqui - the former known for it’s bright and clean profiles, and the latter known for it’s deep and sweet, slow ripening cherries. So we’ve got this incredible profile which begins in the cola, blackberry and blueberry lane, before indicating and veering off into the juicy berries, floral and fresh plum exit, before finally turning off into the orange red, marmalade, earl grey, watermelon… I could go on but I won’t. \u003c\/p\u003e\n\u003cp\u003e\u2028\u2028Subtext was founded by Alex Castellani, and they roast in Toronto, Canada.
