A washed Red & Pink Bourbon lot from El Silencio in Palestina, Huila, Colombia. Coffees are picked and then fermented as whole cherries from 12 - 24 hours before being depulped, washed and dried. I wish there was more to say here about processing but it’s been an excellent showcase of this variety: we found fresh purple flowers, tropical fruits and peach on the first pass and a passionfruit/pink candy structure on the second pass with a soft grapefruit kiss.
Dak was founded by Louis-Philippe Boucher and Veronique Lagarde, and they roast in Amsterdam, the Netherlands. This coffee was roasted on 15.10.2024.
This coffee is 250g. We recommend drinking it 3 to 12 weeks after roast, and storing in an airtight container.
