A natural Caturra from the Aponte Communite in Nariño, Colombia. We featured a few coffees from Aponte from Prolog last time, but this is our first time having a natural from them. This coffee comes from a very high altitude of around 2100masl. This is a seriously complex coffee, thanks to not only the high altitude but a staggeringly long pre-fermentation of four weeks in whole cherry, before being pulped and dried in the seed. Last time we tried this coffee, honey was the first thing that came to mind, and this time was no different. We tasted a sweet and juicy cup, reminding us of honey, apricot cobbler, mango, peach nectar and a floral finish!
Prolog was founded by Sebastian Quistorff and Jonas Gehl, and they roast in Copenhagen, Denmark. This coffee was roasted on 17.3.25.
This coffee is 250g. We recommend drinking it 3 to 12 weeks after roast, and storing in an airtight container.
