A ‘CH56’ washed Typica from Oscar & Angie Hernandez, and Anibal Plazas’ ‘Los Nogales’ in Bruselas, Huila, Colombia. I couldn’t find much specifically on “CH56”, but as best I can ascertain, CH56 is an approach involving Thermal shock to release glucose and destroy bad bacteria, and the lot is the left to ferment with mossto and starter culture for 90 hours before being washed. We found a classically “Nogales FUNKY” cup here, with our notes including such phrases as “classic plum funk; Umeshu; Winey; Like cordial, lime or berry”. It’s funky and excellent!
