Feels weird to not write about Ethiopian coffee for a minute… An organic washed selection of Bourbon, Caturra and Marsellesa from farmers surrounding the El Vergel Village in Sierra Madre De Chiapas, Mexico. This is a cooperative lot sourced with a farmer led cooperative called CAFECO. We never see too many lots from Mexico but we thought this one was quite delicious… We found an orange, pecan chocolate and berry-like complexity whilst hot, and as it cooled we were reminded of marmalade and pecan pie :)
Coffee Collective was founded by 2006 World Barista Champion Klaus Thomsen as well as Peter Dupont and Casper Engel Rasmussen and they roast in Copenhagen, Denmark. This coffee was roasted on 14.10.25.
This coffee is 250g. We recommend drinking it 3 to 12 weeks after roast, and storing in an airtight container.
