A 'Hydro Honey' Sidra from Frank Torres' 'Finca La Indonesia' in La Pradera, Nariño, Colombia. Sidra is one of our favourite varities: at it's best, it presents clear and articulate acidities with a candy-like tilt. Unfortunately we couldn't find direct info as to what specifically 'hydro honey' is, but we can assume it's a honey fermented coffee that is then washed. This is an extremely exciting Sidra from an extremely talented roaster: expect a transparent pond of hibiscus, lemonade with a sparkling acidity, cooling toward a fruity cherry and lime vividness.
