A natural selection from Tadesse Hanka in Bombe, Bensa, Sidama, Ethiopia. Naturals from this high up (~22-2300masl) take a very long time to ripen and benefit from slow cooling, which makes the general Bensa / Sidama / Guji region among out favourites in Ethiopia. We found a jasmine fizz with bright red berry connotations whilst hot, and as it cooled the jasmine stayed and brought along blueberry and stewed fruits to the flavour profile.
