An advanced natural Mejorado variety from Nestor Lasso’s ‘El Diviso’ in Pitalito, Huila, Colombia. This is the first time El Diviso’s crop of this burgeoning variety has been featured by Sweven, so we get to experience the unique complexity combined with Nestor Lasso’s wild and complex processing. These Mejorado cherries are pre-fermented for 24 hours before undergoing two 48 hour sealed fermentations, followed by a careful 15 - 20 day drying that yields a profile that reminded us of raspberry jam, tiramisu, cherry popping candy - moving toward a blue purple lychee danish kinda situation as it cools!
