A washed Pacas from Jobneel Caceres Dios’ ‘Finca Nacimiento’ in El Cielito, Santa Barbara, Honduras. This particular lot comes from the later pickings at Nacimiento, where the coffees have a more ripe and fruity expression coming from the higher elevation, slower ripening times from those cherries. This pronounced sweetness is why Tim selected it as a ‘Christmas Coffee’ - we found a unique winey acidity we haven’t discovered in Nacimiento coffees before, alongside cherries, peach, summer apricots and blackberry!
