Return of the King. Jimenez’ coffees had been impressing us from SEY for a while but we were recently bolstered in impressed-ness after having his coffee roasted by Swerl as well. A washed Pink Bourbon selection from El Porvenir, located in Santa Barbara in the Palestina district of Huila, Colombia. Jimenez is a regularly high placer in the Copa de Oro competition and it’s easy to see why - there are bright acidities, crisp and clean flavours and a very modern profile, reminding us of pineapple, blackberry, cherry in a jammy, syrupy container of goodness.
Sey was founded by Lance Schnorenberg and Tobin Polk, and they roast in Brooklyn, New York. This coffee was roasted on 10.2.2025. We recommend a slightly longer resting time with these coffees, and pursuing a higher extraction where possible.
This coffee is 250g. We recommend drinking it 3 to 12 weeks after roast, and storing in an airtight container.
