A washed Pacamara from Diego Baraona's 'Los Pirineos' in Tecapa-Chinameca, Usulutan, El Salvador. The Baraona family are among the most impressive producers we know, experimenting with variety and processing alongside some of the most consistent and clean releases we get to taste each year. This Pacamara is winey and complex, leading fruit forward with an icypole, violet and pear complexity whilst hot, cooling toward ripe purple fruits, in a sweet and chunky profile!
