Paraiso… A variety that we’ve had from Costa Rica a couple of times shows up in the unexpected location of Fazenda Um’s greenhouse. This variety is grown at a very high (in Brazilian standards) 1350masl, ensuring proper density and expression of the coffee. The seeds are dried in whole cherry on raised beds in a green house to ensure correct humidity and moisture for simultaneous fermentation and drying. We’ve got a bit of a candy like sweetness up front whilst hot, sitting in the Rhubarb jammy land with a bit of a lychee, candy, raisin and nectarine thing going on as well. yay
ULT was founded by Boram Um, Takahiro Tsujimoto and Marcia Yoko and they roast in Osaka, Japan. This coffee was roasted on 3.6.2026.
This coffee is 150g. We recommend drinking it 3 to 12 weeks after roast, and storing in an airtight container. Please use cooler water, around 90-93ºC.
